(Yields 8 to 10 pieces)
1/2 cup maple syrup
1/2 cup brown sugar
1/2 tsp. cayenne pepper
1 lb. thick-cut smoked bacon
1 cup milk chocolate, melted over double broiler (optional)
Preheat oven to 350°F. Mix maple syrup, brown sugar, and cayenne pepper together. Spread evenly over bacon on a lined baking sheet. Bake for 25 minutes or until crispy. Remove from pan and let cool a cooling rack. If desired, drizzle melted chocolate over the top.
