DESCRIPTION:

INGREDIENTS:
16 oz. spinach
2 garlic cloves, minced
1/2 cup fresh cilantro, finely chopped
1/2 cup fresh parsley, chopped
1 cup walnuts, chopped
Salt, to taste
1/4 tsp. cumin
1 tsp. olive oil
1 tsp. lemon juice or red wine vinegar
Pomegranate seeds for garnish
Ice water
DIRECTIONS:
Clean spinach, and then steam in a small amount of water until tender. Pour hot water off, and place spinach into an ice bath to preserve the bright green color. Drain through a sieve, and press water out by hand. In a food process, add the steamed spinach, garlic, cilantro, parsley, walnuts, salt, cumin, and olive oil, and blend until mixture turns into a paste. Add lemon juice or red wine vinegar and mix again. Remove paste from the food processer, form into a patty, and garnish with pomegranate seeds. Serve with toasted pita points or baguette slices.
