Postero Hendersonville

This blending of French technique and American ingredients adds culinary heft to Hendersonville’s Main Street. Following a pragmatic American sensibility, Postero’s menu presents three sections—snacks, medium plates, and big plates—making for an easily customized dining experience in a space that’s modern and airy. Start with pork belly confit with apple kimchi and move on to shiraz-braised lamb shoulder topped with chowchow. 401 N. Main St.; (828) 595-9676; www.postero-hvl.com

The Local Boone

One of Boone’s favorite eateries, Char, recently transformed into The Local. Char’s owners remain, along with the eclectic approach to food, but the style is now more casual. Wood-fired pizzas, including vegan and gluten-free options, and fish-and-chip baskets share the menu with a Brazilian steak platter and a vegetarian quinoa bowl. The space doubles as a billiards room and music venue, with trivia and live entertainment throughout the week. 179 Howard St.; (828) 266-2179; www.thelocalboone.com

Jaime’s Creole Brasserie Brevard

The owners of Marshall’s beloved Pork & Pie relocated to Brevard to represent the food of their home state of Louisiana. Chef Jaime Hernandez serves classic creole grillades and gumbo with Appalachian additions, such as Benton’s bacon. The pizzas that elicited a following at Pork & Pie made the move to Hernandez’s new haunt, and the pork is duly represented, too. Meals of cochon au lait (whole roasted pig) is great for groups and can be reserved in advance. 44 E. Main St.; (828) 883-3388; www.jaimescreole.com
