216 g. (60%) bread flour
120 g. (33%) whole wheat flour
25 g. (7%) soft flour (rye, buckwheat, corn, etc.)
270 g. (75%) water
108 g. (30%) levain
8 g. (2.2%) salt
Use Sourdough basic recipe and press the dough into a cake pan. Place thinly sliced potatoes on top along with olive oil, a sprinkling of coarse salt, pepper, and sage.
