WHITE WINE AND HERB VINAIGRETTE

INGREDIENTS: 

1/4 cup white wine vinegar
1 tbsp. Dijon mustard
1 tbsp. honey
1/2 tbsp. minced shallots
1/2 tbsp. minced garlic
1/2 tsp. kosher salt, plus extra to taste
Pinch freshly ground black pepper, plus extra to taste
3/4 cup blended oil
1/2 tbsp. basil, finely chopped
1/2 tbsp. parsley, finely chopped
1/2 tbsp. thyme, finely chopped

DIRECTIONS: 

Add vinegar, mustard, honey, shallots, garlic, salt, and pepper into a blender and puree until smooth. With the blender running, slowly add oil until emulsified. Transfer to a small bowl and stir in basil, parsley, and thyme. Taste and adjust seasoning as necessary.
