(Yields 4-5 pops)
INGREDIENTS:
1 oz. London Dry Gin
1 fresh squeezed lemon, strained
2 oz. simple syrup (1 part sugar/1 part water)
1 heavy dash Angostura bitters
8-10 mint leaves
Sparkling soda
DIRECTIONS:
Place all ingredients except soda in a shaker and muddle. Shake, and strain into a two-cup measuring cup. Add enough sparkling soda to fill to the two-cup mark. Pour into pop molds and freeze. In two hours, add wooden sticks and mint garnish into the molds. Freeze for at least 12 hours before serving.

Mountain Bee
2 oz. honey-spruce syrup
1 oz. high-proof bourbon
1 oz. lemon juice
Sparkling soda
Make honey-spruce syrup by diluting one-part honey with a quarter-part hot water. Soak with spruce and pine tips for a day, or until desired taste.
In a two-cup measuring cup, add syrup, bourbon, and lemon juice. Add enough sparkling soda to fill to the two-cup mark. Add more syrup for desired sweetness. Pour into pop molds and freeze. In two hours, add wooden pop sticks and pine needles for garnish. Freeze for at least 12 hours before serving.

1 oz. Carriage House Apple Brandy
2 oz. simple syrup (1 part sugar to 1 part water)
3 Tbsp. dried lavender
