1 stick of butter
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 ½ cups chocolate chips (we used French Broad Chocolate's 68% dark chocolate chips)
3 tbsp cacao nibs
Cream the butter and sugars together in a stand mixer or with a hand mixer on medium for 3 minutes or until light and fluffy. Stream in egg and vanilla, and mix to combine. Whisk then sift the three dry ingredients, flour, soda, and salt. Add in the sifted dry ingredients into a mixing bowl; mix just enough to combine. Add in chocolate chips and nibs, then mix to combine.
Line a 9" cast iron pan with parchment paper. Spread dough evenly in the pan, then sprinkle with flake salt evenly across the surface. Bake for 25 min at 350, and allow the cookie to cool before serving.
