Sarsaparilla, Black Cherry & Black Birch Digestif
INGREDIENTS: 
  25 oz. bottle Troy & Sons Moonshine 1/4 cup sarsaparilla root, bruised 1 cup wild pin cherries, slightly crushed,  + additional for serving 1/4 cup black birch pith, chopped
DIRECTIONS: 
  Infuse moonshine with sarsaparilla root, wild pin cherries, and black birch pith for a week at room temperature. To serve, place a quarter teaspoon of macerated pin cherries in a champagne flute. Sieve the moonshine into a cocktail shaker over crushed ice. Shake lightly to chill. Pour into glasses and garnish with black birch stem and leaf and sarsaparilla root.
