INGREDIENTS:
(Yields 1½ cups)
2 egg yolks
2 Tbs. Dijon mustard
2 lemons, juiced
4 Tbs. nutritional yeast
1 cup safflower oil
1/4 cup chives, snipped
Salt & pepper, to taste
DIRECTIONS:
Blend egg yolks, mustard, lemon juice, and yeast in a food processor fitted with a blade. Drizzle in oil while running on low and blend until oil is incorporated. Add chives and pulse until well mixed. Season with salt and pepper. Thin with water if necessary.
