Boojum Brewery Taproom
Waynesville
This cozy downtown pub is named for the Appalachian version of bigfoot—a ragged, giant mountain man who roams the forests. Like its namesake, Boojum is big, at least for a startup microbrewery. It already boasts two facilities: the taproom and a separate brewery that is open for tours and tastings. At the former, choose a beer from 16 taps—about half of which are Boojum’s—and pair it with a burger, sandwich, or salad from the food menu. 50 N. Main St.; (828) 246-0350; www.boojumbrewing.com
Fresh West
Asheville
Black Mountain’s favorite pizza spot comes to Asheville this spring in the River Arts District building that formerly housed Pizza Pura. The Asheville location focuses on personal-size wood-fired pies. Toppings are generally Mediterranean, but a few global outliers give this restaurant signature flare. Try the Alaskan with dill and caper-cream sauce, mozzarella, red onions, and a smoked salmon topping. 342 Depot St.; (828) 552-3917;

100 Main
Valdese
When Waldensian immigrants from northern Italy founded the town of Valdese in the late 19th century, they brought with them soutisso sausage (made from lean pork, spices, and garlic). Today, 100 Main proudly serves that staple along with a variety of full-flavor comfort food. The dishes are familiar yet exciting, such as burgers topped with apple slaw and lasagna made from smoked pork. Pair a meal with one of several North Carolina beers on tap or a craft cocktail.
