INGREDIENTS:
Makes 20 quarter-pound burgers
5 lbs. ground lamb
2 Tbsp. fresh garlic, chopped
2 Tbsp. fresh sage, chopped
2 Tbsp. red pepper flakes
2-3 Tbsp. kosher salt
2 Tbsp. ground black pepper
20 2-3 oz. portions raw biscuit dough
Halloumi cheese
DIRECTIONS:
Combine lamb, garlic, and seasonings. Shape into quarter-pound patties and chill.
Roll out raw biscuit dough to about a quarter-inch thick. Place in waffle iron and close lid until golden and crispy. Remove from iron and quarter waffle for the buns. Grill burgers to desired temperature. Serve on waffle buns with grilled halloumi cheese, mustard grilled onions, and other preferred toppings.
