INGREDIENTS:
6 Campari tomatoes, sliced in half
2 Tbs. olive oil
2 tsp. thyme leaves
Salt & pepper, to taste
6 Tbs. balsamic vinegar
Dried basil, to taste
DIRECTIONS:
Preheat oven to 250°F. In a bowl, toss tomatoes with olive oil, thyme, salt, and pepper. Place tomatoes cut-side up on a baking sheet. Sprinkle each with balsamic vinegar and dried basil. Roast for four hours. Remove and serve warm.
