Gingerbread Cake
1/4 cup molasses 1 cup sugar 4 oz. butter 1/2 cup hot water 2 cups flour 1 tsp. baking powder 1/2 tsp. salt 1 tsp. nutmeg, freshly grated 2 tsp. ginger, freshly grated 1 large egg, beaten 1 mango, sliced
Preheat oven to 300°F. Grease a nine-inch loaf or round pan, then line with wax paper and set aside. In a medium saucepan over low heat, warm molasses, sugar, and butter, stirring until the butter is melted. Add hot water, mix well, and set aside. In a bowl, sift together flour, baking powder, salt, and nutmeg. Add ginger and egg and mix well. Pour molasses mixture into flour mixture and stir until just combined. Pour batter into the prepared pan and bake for one hour. Serve with fresh mango slices on top.
