Devil’s Oasis
1¼  oz. light rum 1/2 oz. passion fruit puree (available at gourmet food stores) 1/2 oz. fresh lime juice 1 oz. cayenne-infused honey 1/2 oz. dark rum Cayenne-infused Honey 1 cup honey 1 cup water 1 Tbs. cayenne pepper
Honey: Combine ingredients in a pot and heat on low for 45 minutes. Strain through a chinoise and store in refrigerator until ready to use. Drink: In a shaker, combine light rum, passion fruit puree, lime juice, and honey, and shake for 10 seconds. Pour into a cocktail glass. Carefully pour dark rum to float on top. Garnish with a lime wedge infused with bitters, and dust with cayenne pepper.
