INGREDIENTS:
4 bone-in chicken breasts
1 bottle red wine
Salt and pepper, to taste
1 lb. button mushrooms
12 white pearl onions, peeled
4-6 oz. pancetta or smoked bacon, diced
2-3 cups rich chicken stock
DIRECTIONS:
Marinate chicken in half of red wine with salt and pepper overnight. Preheat oven to 350°F. Place chicken, remaining wine, mushrooms, onions, pancetta, and chicken stock in a Dutch oven. Cover and cook about 40 minutes; juices should run clear. Make sure chicken is cooked through. Serve with mashed potatoes.
