Blue Flannel Hash
INGREDIENTS: 
1/2 lb. sausage 3 Tbs. olive oil 1 Vidalia onion, chopped 3 cups mixed red, white & blue potatoes, chopped Salt & pepper, to taste
DIRECTIONS: 
In a skillet, brown sausage over fire, drain, and set aside. Heat olive oil in skillet. Add onion, and brown lightly. Add potatoes, cover, and cook for 10 to 15 minutes, or until cooked through. Remove from fire. Stir in sausage. Mix and season with salt and pepper. Cover until ready to serve.
