1 cup granulated sugar
Zest of 4 limes
1 pt. strawberries, rough chopped
3/4 cup water
Place sugar in a shallow bowl, and zest limes over the top using a Microplane grater. Add strawberries and stir. Let sit for at least an hour and up to four hours. The sugar will absorb the oils from the lime zest and should have a paste-like texture. Transfer to a pot, add water and place over medium-high heat until sugar is fully dissolved. Let cool to room temperature and strain it into a container. Syrup should keep for up to two weeks refrigerated.
