Spinach Melt
DESCRIPTION:

INGREDIENTS: 
(Makes 4 Sandwiches) 12 oz. fresh spinach (8 oz. if frozen) 1/2 cup water 3 cloves garlic, pressed 1/4 cup yellow onion, minced 1/3 cup sour cream 1/3 cup mayonnaise 1/2 cup Roma tomato, seeded & diced 1/2 cup feta cheese Pita bread, flatbread, or marbled rye  
DIRECTIONS: 
Steam spinach in water until soft. Plunge in an ice bath, then press in a fine-mesh colander until almost all water is pressed out. Chop coarsely and place in a large mixing bowl. Add garlic, onion, sour cream, and mayonnaise, mixing until all the clumps are broken up. Fold the tomato and feta cheese into the mixture until incorporated. Cover and chill.  To serve, grill bread in a skillet. Warm the spinach mixture in the microwave for 30 seconds or sauté in a pan until thoroughly warmed. Serve on the grilled bread.
