Smoked Trout Filling
INGREDIENTS: 
8 oz. cream cheese (room temperature) 20 oz. Sunburst Trout Farm smoked trout 6 Roma tomatoes, sliced Bean sprouts Spinach
DIRECTIONS: 
After crêpe has been flipped in pan, spread one ounce of cream cheese to cover a quarter of pancake. Crumble three ounces of smoked trout over cheese. Top with tomatoes, a small tuft of sprouts, and small handful of spinach. Fold crêpe in half, then fold in half again to create a pie-slice-shaped pocket.
