Garlic-lime Chicken with Grilled Pineapple

Ingredients: 

Have Ready:

  • 6 boneless chicken breasts
  • 1/2 fresh pineapple, peeled, cored, and sliced

Marinade:

  • 6 garlic cloves
  • 2 Tbs. soy sauce
  • 2 inches fresh ginger, peeled, and sliced
  • 1/3 cup fresh lime juice
  • 3 Tbs. olive oil
Directions: 

To make marinade, combine the ingredients in a blender and pulse until garlic and ginger are well ground. Pour marinade into a sealable plastic bag and add chicken. Seal and place in refrigerator for at least four hours or overnight. Remove chicken from marinade and cook under a broiler or on a grill for 20 to 25 minutes, turning every five minutes, until cooked through. Place chicken on a platter and let cool for five minutes. Grill pineapple slices until golden brown, about two minutes per side, and serve on top of chicken.
