WNC Chefs Challenge 2011, Week 14

The set scene for a sold-out and last night of competition in the WNC Chefs Challenge at Cucina24 in 2011. Secret ingredient was red and white peaches from Upstate South Carolina.

Team Posana's 2nd dish - Swiss chard-wrapped salmon torchon with speck and a peach demi-glace, warm-burst cherry tomato salad, pickled peaches with house ricotta and pistachio-pink peppercorn vinaigrette
The 2nd dish from team Knife & Fork - roasted duck breast with peaches, dandelion greens and red Russian kale with peach-basil sauce
